Wakeboards, knee boards, and water skis kept us busy at the lake last week. We rented a house with an incredible view and had a great vacation. Any good vacation is incomplete without great food. Food always seems to accent the memories of a trip. Great meals at home round out the activities that become the story of our family. This trip was filled with successes. Each of us developed new skills on the lake, pushed the boundaries of what we thought we could do and enjoyed each others company. Some of our successes were off the lake. This success was over the coals! We found a new campfire favorite thanks to Bigler’s Best Belly Pleasers. Campfire Eclairs look too fancy for campfire food, don’t they? They are as pretty to look at as they are good to eat!
To get started you will need to get your campfire going. At the lake we did not have a fire ring, so we used a charcoal grill. Whether over the grill or the campfire, you want the fire to die down to hot coals to cook your shells.
To make the shells you will need 3/4 inch wood dowels (I found mine in the finishing section of a building supply like Home Depot), nonstick aluminum foil (Regular foil sprayed with oil will work too.), 1 can of refrigerated crescent rolls ( I used the seamless dough sheet.), a cutting board, a knife, 2 any flavor pudding snack packs, 1 can chocolate frosting and dairy whipped topping in a can.
1. Wrap the end of your wood dowel with nonstick foil.
2. Cut the dough to your desired size and wrap it around the foil end of your dowel.
3. Hold it over the fire above the flames, rotating until it is golden brown on all sides.
4. When it is golden brown on all sides, let it cool slightly. When cool enough to touch, gently slide the eclair shell off the end of the stick.
5. Place shells on cutting board to cool.
Now for the fun stuff!
Carefully spoon pudding into shells.Top with chocolate frosting. We liked a generous amount!Now top with whipped topping and you have the prettiest campfire dessert this side of the Mississippi. And that’s no matter what side of the Mississippi you are on. Because…

A disposable icing bag would serve to put the pudding in or put pudding in a Ziploc sandwich bag and cut a corner off to squeeze the pudding into the shells. But a great idea. I will use at out next campfire.
