Why do we use egg and what part does it play? Can I make these cookies without the egg as it is not part of my diet? I’m a vegetarian but I use dairy products. I realize that we have to brush the cookies with egg whites to make the sliced almonds stick on to the cookies, Can I substitute almond powder and mix it with the flour to give the almond taste or use almond extract instead of vanilla? I just made whole wheat flour cookies with no egg but used butter and yoghurt. It turned out well. Also, for people, who are health-conscious, can we substitute oil in some of the cookie recipes that calls for butter?
Thanks for sharing your recipe. It’s interesting indeed!

Hi Sheela! We haven’t tried making these with those substitutions but from what we know about them, we think that it would work! Let us know if you make them!
