Hello all of our favorite Made From Pinterest Readers! How has your summer been? My summer, along with my sisters Tracy and Sherri have been jam-packed with all sorts of activities. Some have been super fun – babies being born, family get-togethers, band camps, youth conferences and lots of water activities. Some have been super scary – a wakeboarding accident ending up in a helicopter flight to the hospital. Some have been tragic with a death in the family last week. Some have been super exciting – starting an addition onto our home. We are definitely in a construction zone!
All of this has happened in one summer. Phew! I’m tired just reading about it!
But the best part has been all the times that we have been able to get together as a family. Isn’t that what life is all about? When all of my children are able to be home and we get to be together, it re-charges my battery and fills up my bucket. I am at my best and at my happiest.
It also makes me happy to feed my family and this past summer we have had plenty of this Lime Poppy Seed Dressing on hand. It has been so refreshing and it is SO quick to make. There are lots of recipes out there for poppy seed dressing but I like this one because it’s so creamy. Our favorite thing to put this dressing on is our Mango Pasta Salad recipe. You will definitely want to add this recipe to your list!
This salad dressing is also superb on a spinach, strawberry and feta cheese salad. And we have also just been known to use it as a dip with fruit. So many possibilities! I’m sure it will become your new favorite dressing. Enjoy!
Lime Poppy Seed Dressing
Ingredients
- 3/4 cup mayonnaise
- 1/3 cup sugar
- 2 tablespoons lime juice
- 2 teaspoons poppy seed
Instructions
- Combine all ingredients together and mix with a whisk until well blended and smooth and creamy. Let the dressing sit for a little while for sugar to dissolve. Refrigerate until ready to serve.
